Mushrooms - Shiitake

The shiitake mushroom sometimes referred to as the Chinese mushroom is the queen of umami flavours, and a great way to bring a bold kick to any of your favourite mushroom dishes. Often used in Asian dishes, this mushroom can also be a great addition to both stews/hotpots and great on the BBQ. This mushroom is also often dried and then used to make stocks similar to the porcini.
